Banana Bread Cake Recipe

With fall on the horizon I’m thinking a lot about various Fall type recipes. One that comes to mind is banana bread or banana bread cake as some people call it. I love Banana bread and could eat it all the time. Especially during the Thanksgiving holidays. If you don’t know what Banana bread is then you are missing out. People make banana bread using a lot  of different recipes, but one that I like is:

Think of a normal loaf of bread and imagine it made up of mashed up bananas, this sweet tasting bread is, of course, banana bread. We add baking soda in order to make the bread rise and act as an agent that leavens the bread out.

Many cooks like to make variations in their banana bread recipe by adding nuts or raisins or other ingredients. It is a simple recipe that does not need complex ingredients and does not even need an electric beater if you do not have one.

This type of bread came to the popluar masses in the 1900’s at the same time baking soda. In many countries in Asia this is a regular addition to the staple diet and can be served as a substitute to everyday white bread.

Here Is The Banana Bread Recipe.

So, this is what you require in order to make this very easy bread.

1 cup butter for shortening

5 mashed up, over-ripe bananas.

2 1/2 cups of sugar.

Eggs x 4.

3/4 of a cup full of buttermilk.

3 level cups full of flour.

1 1/2 teaspoon baking soda.

About a half a teaspoon of salt.

Your choice as an addition – 1 cup of nuts chopped up.

About one and a half teaspoons of vanilla.

Add the sugar and bananas together and slow add the eggs one at a time, beat them all together whilst you are adding the eggs. Put in the sifted baking soda, salt and flour. Add the buttermilk and any additional ingredients to the mixture to form a batter.

Empty the contents into 2 greased loaf pans but leave about an inch gap from the top of the pans to allow the bread room to rise. Bake for an hour and 20 minutes on 325 degrees.

This bread makes use of over-ripe bananas that you may otherwise throw away and it has less refined carbs that the normal white bread. There are many ways to make banana bread from a variety of different recipes.

If you do not use overripe bananas, the tendency is that the top of the banana bread loaf will remain moist and you will have a hard time distinguishing if it is already done or not.

Welcome back!
