Beer Bread
For one large loaf you will need:
- 3 cups self rising flour
- 3 tablespoons granulated sugar
- 1/2 teaspoon onion powder (optional)
- 1/2 teaspoon garlic powder (optional)
- 1 level teaspoon dried chives
- 1/2 to 3/4 cup of sharp cheddar cheese
- One 12 ounce can of room temperature beer (I used Budweiser and it worked very well)
- 2+ tablespoons butter, melted
Grease metal loaf pan with non-stick cooking spray and sprinkle with cornmeal (can be made without the cornmeal too if you prefer) and set aside. Preheat oven to 325 degrees.
Combine all ingredients in a large bowl except for the beer and cheese and mix well. Pour beer into dry mixture, then add cheese before stirring. Stir with large wooden spoon until all ingredients are mixed well.
Spoon batter into loaf pan and spread so there are no "high spots" in the batter. Then bake for approximately 60 minutes, longer if necessary. Top should be a light golden brown and a knife can be inserted into center of bread to check to see if it is done. Bread is done when knife comes out with crumbs instead of batter.
Once done, remove bread from oven and place loaf pan on cooling rack, then generously brush melted butter on top of bread.
